INGREDIENTS:
1 1/2 cups (300 g) sugar
1/2 cup (100 g) firmly
packed brown sugar
3 oz (90 g) bittersweet
(dark) chocolate, chopped
2 tablespoons corn
(golden) syrup
1/2 cup (125 ml), heavy
(double) cream
1/4 cup (60 ml) milk
1/4 cup (60 g) butter
PROCEDURE :
- butter an 8-inch (20 cm) square baking pan.
- Place the sugar, brown sugar, chocolate, corn syrup,
cream, and milk in a large, heavy-based saucepan over low heat.
- Stir until the sugar has melted. taking care not to let
the mixture boil.
- When the sugar has completely melted, bring to a boil
and simmer under low heat for 10 minutes.
- Remove from the heat and add the butter
- Do not stir the mixture at this stage.
- Let cool for 20 minutes.
- Pour into the prepared pan. Cover with the piece of
baking parchment and let cool until set, about 3 hours.
- Turn out onto a cutting board. Cut into small squares.
Makes about 40 pieces
